One standout recipe is mushroom-smothered chicken, where tender chicken breasts are topped with decadent oyster mushrooms in a creamy gravy sauce. Oyster mushrooms are amazing in this dish but you can use shiitake, lion’s mane, maitake, or cremini mushrooms for this extremely versatile dish! The rich mushrooms, combined with garlic, tarragon, and a blend of herbs and spices adds a flavorful sauce that perfectly complements the juicy chicken. This dish is a definitive way to impress guests or simply enjoy a restaurant-quality meal at home.

Mushroom-smothered Chicken
Ingredients:
6 boneless skinless chicken breasts, split and pounded to about ¼ inch thickness.
1 tbs. chopped parsley
1 tbs. chopped tarragon
5 tbs. butter
½ tsp Salt and Pepper
1 cup chicken broth
½ lb fresh oyster mushrooms, sliced
2 tbs. onion, minced
2 tbs. flour
½ cup heavy cream
¼ cup cooking wine (could use a dry white wine too)
Parsley flakes
1 tbs. paprika
Sauté chicken breasts 6-8 minutes on each side in the 3 tbs. butter, parsley and tarragon. Remove the chicken from the skillet, and salt and pepper each side. Stir broth into the skillet and let it come to a complete boil. Drain off the broth and set it aside. Sauté mushrooms and onion in 2 tbs. Butter. Blend in flour. Add broth, heavy cream and wine, and let it come to a boil. Stir continuously. Arrange the breasts in a buttered casserole dish or baking pan and pour mushroom mixture over them. Garnish with parsley flakes and paprika. Bake at 400 °F for 20 min. Enjoy!
